Do you ever discover one of those “healthy treats” that are technically good for you but not after you eat 5 of them? Yeah, those are dates for me. I first tried them early last year and have since been hooked. Thank goodness they are packed with natural sugars (and fiber) which hit your body much slower than processed sugar. And they are amazingly versatile and can be added into almost any dish to sweeten it up (I’ve even seen them on pizza!).
This recipe was an experiment gone right. I’ve often found myself searching my kitchen for something sweet and only finding random ingredients. This is how these babies were born (as well as I can’t say no to anything with peanut butter or coconut in it).
These peanut butter coconut date desserts are:

Additionally, these things last in the fridge all week, which means you can whip up a batch in ten minutes on Sunday and have dessert all week. - 5 dates
- 1 tbsp natural peanut butter
- 2 tbsp semi-sweet coconut flakes
- Cut dates length ways and remove pit
- Spread peanut butter on either side of opened date
- Sprinkle coconut flakes and close
- Let sit in fridge for two hours to harden up
